রূপচাঁদা শুটকির দোপেঁয়াজা
উপকরণ :১. রূপচাঁদা শুটকি ১টি, ২. তেল পরিমাণ মতো, ৩. পেঁয়াজকুচি ২ কাপ, ৪. রসুন কুচি আধা কাপ, ৫. টমেটোকুচি আধা কাপ, ৬. সামান্য আদাবাটা, ৭. ধনিয়াগুঁড়া আধা চা-চামচ, ৮. মরিচগুঁড়া ৩ চা-চামচ, ৯. হলুদগুঁড়া দেড় চা-চামচ, ১০. কাঁচা মরিচ ৬টি, ১১. লবণ স্বাদমতো।
পদ্ধতি :রূপচাঁদা শুটকি দুই ঘন্টা পানিতে ভিজিয়ে রাখুন। নরম হলে ছোট ছোট টুকরা করে কেটে, ভালো করে ধুয়ে নিন। এবার প্যানে তেল দিন। তেল গরম হলে তাতে পেয়াঁজকুচি, রসুনকুচি, সামান্য আদাবাটা, ধনিয়াগুঁড়া,মরিচ,হলুদ,তেল,লবণ,কাচাঁমরিচ আর টমেটো-কুচি সব মসলা ভালো করে ভেজে নিন। পেঁয়াজ নরম হয়ে এলে তাতে মাছ দিয়ে কিছুক্ষণ ভাজুন। এবার অল্প পানি দিয়ে ভালো করে কষিযে ঢেকে দিন। পানি কমে মাখা মাখা হলে তাতে কাঁচামরিচ দিয়ে নামিয়ে ফেলুন।
Rupchanda Shutki (Dried Fish) with Onions
Ingredients: 1. Rupchanda shutki (dried fish) 1 piece, 2. Oil as needed, 3. Chopped onions 2 cups, 4. Chopped garlic 1/2 cup, 5. Tomato paste 1/2 cup, 6. Minced ginger, 7. Coriander powder 1/2 teaspoon, 8. Red chili powder 3 teaspoons, 9. Turmeric powder 1 and 1/2 teaspoons, 10. Green chilies 6 pieces, 11. Salt to taste.
Method: Soak the Rupchanda shutki in water for two hours. When softened, cut it into small pieces, wash thoroughly, and drain. Heat oil in a pan. Once the oil is hot, add chopped onions, chopped garlic, minced ginger, coriander powder, red chili powder, turmeric powder, and tomato paste. Fry the spices and ingredients well. When the onions become soft, add the fish and fry briefly. Then add a little water, cover, and cook until the water reduces. When the gravy thickens, add green chilies and adjust the salt.
