নোনা ইলিশে বেগুন
উপকরণ : ১. নোনা ইলিশ ৪ টুকরা , ২. বেগুন ৫০০ গ্রাম, ৩. হলুদগুঁড়া আধা চা-চামচ, ৪. মরিচের গুঁড়া ১ চা-চামচ, ৫. তেল ১ চা-চামচ, ৬. জিরাগুঁড়া আধা চা-চামচ, ৭. কাঁচামরিচ ৪-৫টি, ৮. পেঁয়াজকুচি ১ টেবিল চামচ, ৯. রসুনবাটা ১ চা-চামচ।
পদ্ধতি : নোনা ইলিশ পানিতে ভিজিয়ে রেখে ভালোভাবে ধুয়ে নিন। বেগুন টুকরা করে পানিতে ভিজিয়ে রাখুন। তেলে পেঁয়াজ অল্প ভেজে হলুদ গুঁড়া,মরিচ গুঁড়া ও রসুনবাটা দিয়ে কষান। ইলিশ ও বেগুন ঢেলে দিয়ে নাড়তে থাকুন। অল্প পানি দিয়ে ঢেকে দিন। বেগুন সেদ্ধ হলে জিরা গুঁড়া ও কাঁচা মরিচ দিন। নোনা ইলিশ পর্যাপ্ত লবণ থাকায় তারকারিতে লবণ দেওয়ার প্রয়োজন নেই।
Nona Ilish with Eggplant
Ingredients: 1. Nona Ilish (young hilsa fish) 4 pieces, 2. Eggplant 500 grams, 3. Turmeric powder 1/2 teaspoon, 4. Red chili powder 1 teaspoon, 5. Oil 1 teaspoon, 6. Cumin powder 1/2 teaspoon, 7. Green chilies 4-5 pieces, 8. Chopped onions 1 tablespoon, 9. Garlic paste 1 teaspoon.
Method: Soak the Nona Ilish in water and wash them well. Soak the eggplant pieces in water too. In a pan, heat oil and sauté chopped onions with turmeric powder, red chili powder, and garlic paste. Add Nona Ilish and eggplant and stir gently. Add a little water and cover. Once the eggplant is cooked, add cumin powder and green chilies. Nona Ilish already has sufficient salt, so no need to add extra salt.
