লইট্টা ভুনা
উপকরণ : ১. লইট্টা শুঁটকি ২০০ গ্রাম, ২. পেঁয়াজ কুচি ২৫০ গ্রাম, ৩. রসুন কুচি ১০০ গ্রাম, ৪. রসুন বাটা ১ চা চামচ, ৫. আদা বাটা আধা চা চামচ, ৬. হলুদ বাটা আধা চা চামচ, ৭. মরিচ বাটা আধা চা চামচ, ৮. কাঁচা মরিচ ফালি ৫টি,৯. লবণ ১ চা চামচ, ১০. আস্ত জিরা আধা চা চামচ, ১১. পানি আধা কাপ, ১২. তেলা আধা কাপ।
পদ্ধতি : আস্ত শুঁটকি আগুনে পুরপুর শব্দ হওয়া পর্যন্ত ছেঁকে নিন। এবার শুটঁকি ছোট ছোট টুকরা করে কেটে ধুয়ে পরিষ্কার করে পানিতে ভিজিয়ে রাখুন। চুলায় কড়াইয়ে তেল দিয়ে গরম হলে অর্ধেক পেয়াঁজ কুচি দিন। পেঁয়াজ বেরেস্তা হলে আস্ত জিরা দিন। জিরা ফুটে উঠলে শুটঁকি দিন। ভালো করে নেড়ে সব বাটা মসলা দিন। রেখে দেওয়া পেয়াঁজ কুচি, রসুন কুচি ও লবণ দিয়ে কষিয়ে পানি দিয়ে ঢেকে আঁচ কমিয়ে দিন। ঢেকে দেওয়া শুঁটকি সিদ্ধ হয়ে মাখামাখা হলে কাঁচা মরিচ ফালি দিয়ে নেড়ে আবারও ঢেকে দিন। ভুনাভুনা হলে নামিয়ে ফেলুন।
Fried Dry Fish
Ingredients:
1. Dry fish – 200 grams
2. Onion, chopped – 250 grams
3. Garlic, minced – 100 grams
4. Garlic paste – 1 teaspoon
5. Ginger paste – ½ teaspoon
6. Turmeric powder – ½ teaspoon
7. Chili powder – ½ teaspoon
8. Green chili peppers, split – 5 pieces
9. Salt – 1 teaspoon
10. Cumin powder – ½ teaspoon
11. Water – ½ cup
12. Cooking oil – ½ cup
Method:
Gently roast the dry fish over the flame until it becomes crispy. Now, cut the dry fish into small pieces, wash, and soak them in water. Heat oil in a pan and sauté half of the chopped onions. Once the onions become translucent, add cumin seeds. When the cumin seeds start to splutter, add the dry fish. Stir well and add all the powdered spices. Mix in the remaining chopped onions, minced garlic, and salt. Cook, covered and over low heat, adding water. Once the dry fish is cooked and well-coated with spices, add split green chili peppers and cover again. When it’s fried to your desired consistency, remove from heat.
